Domenico's Speck Alto Adige DOC

Speck is a type of Italian, cold-smoked, cured ham, produced in the Alto Adige region of northern Italy. It's similar to prosciutto but distinguished by its light smoking process, which gives it a unique smoky flavor.  Speck is made from the hind leg of the pig, similar to prosciutto, but it's typically deboned before curing. 

Speck is known for its rich, smoky flavor, balanced with the savory notes of cured ham. It's firmer in texture than prosciutto and has a deep red color and can be enjoyed in various ways, including thinly sliced on antipasto platters, wrapped around fruits, or added to sandwiches and other dishes.
