Humboldt Fog is a soft-ripened goat cheese, produced by Cypress Grove in Humboldt County, California. It is known for its unique appearance and flavor, featuring a creamy texture, a thin line of vegetable ash running through the center, and a bloomy rind. The ash layer, inspired by the French cheese Morbier, not only adds to the visual appeal but also helps in the mold ripening process.
