Jasper Hill Alpha Tolman is a Vermont-made, Alpine-style cheese from Jasper Hill Farm inspired by European cheeses like Gruyère, made from raw cow's milk with a dense, pliant texture and complex, nutty, buttery, and fruity flavors that become bolder and meaty with caramelized onion notes as it matures, making it excellent for melting in fondue or on sandwiches.   try serving it with cured meats, pickles, or fruit.  Goes great with robust ales, Pinot Noir, Chardonnay, or onion jam.
