Livarot

Livarot is a pungent, strong-smelling, soft-paste cow's milk cheese from the Normandy region of France, known for its distinctive orange rind and five encircling strips of dried sedge, which give it the nickname "the Colonel". It is a washed-rind cheese, meaning its rind is regularly washed with brine during its maturation period, a process that gives it its characteristic orange color and robust aroma and flavor.
