El Trigal 8-month aged Manchego is a firm, raw sheep's milk cheese from the La Mancha region of Spain, produced by the Corcuera family. It is aged for at least eight months, resulting in a rich, buttery flavor with notes of acidity and nutty complexity. The distinctive crosshatch pattern on its rind dates back to when the cheese was traditionally wrapped in woven esparto grass.
