Red Witch (Rote Hexe)

Red Witch is a semi-hard Swiss cheese made from raw cow's milk, known for its paprika-rubbed rind that gives it its red color and name. It has a creamy, buttery, and nutty flavor with a pleasant, slightly funky, pungent taste, and is often described as a great snacking cheese.  It's a semi-hard, firm, and creamy cheese aged for about 5 months and pairs well with rustic sourdough bread, spicy salami, and various alcoholic beverages like imperial stouts, porters, pumpkin ales, or Alsatian wines.
